I would like to think that places like this will always exist, where the highest-quality meats will be carved and sold by butchers who have known you for forty years and your parents for longer.
But honestly... would any of you be surprised if one day Amazon globalizes the meat-supply chain and offers same-day delivery of meats imported from Brazil?
There will always be people who care about local, or sustainable, or premium meats.
But will there be enough to keep places like this afloat?
I just don't know.
All I can say is that I feel lucky to have known this place.
