As I have mentioned before, I-25 between Santa Fe and Pueblo is something of a culinary wasteland.
There are a few restaurants I have found over the years that I really like, such as El Rialto in Las Vegas, Wonderful House in Trinidad, and High Octane BBQ in Colorado City, and on a normal day I would have stopped at one of those. (And by "one of those," I mean Wonderful House.)
But I was going to be leaving after dark, as my friend Monica was coming with me - she has never been to Boulder before - and she had to work until 5:30. Which meant our options for dinner on the road were basically limited to fast food.
I am not opposed to fast food, as you no doubt know, but not on a road trip. What's the point of getting food on vacation that you can get at home?
So I decided we would have a picnic in the car. (Technically I merely suggested it, which was met with an enthusiastic "Yes!")
Believe it or not, this was better than Taco Bell or Wendy's.
